And for the gluten-intolerant among us - here's a recipe without wheat flour from Nora Mill (I've not tried this):

1 1/2 cups corn meal

1/2 tsp baking soda

1 tsp salt

1 cup buttermilk

1/4 cup vegetable oil

1 egg

Preheat oven to 400F. Combine dry ingredients (cornmeal thru salt). Combine wet ingredients (buttermilk thru egg). Mix dry and liquid ingredients. Bake in well-greased iron skillet or muffin tins for 20-25 minutes.

Omit baking soda and salt if using Self-Rising Cornmeai

Another slightly different corn bread recipe - Hearty Cornbread from a Junior League of Kansas City cookbook;

1 cup stone-ground corn meal

1 cup whole wheat flour

2-4 Tbsp sugar (recipe actually reads 1/3 cup but that's too sweet for us)

2 1/2 tsp baking powder

1/4 tsp salt

3/4 lb bacon, fried & coarsely crumbled

1 cup buttermilk

6 Tbsp unsalted butter, melted

1 egg, slightly beaten

Preheat oven to 400F. Combine dry ingredients (corn meal thru salt). Combine wet ingredients (buttermilk thru egg). Combine wet ingredients with dry ingredients plus bacon until just blended. Pour into greased pan or muffin tin. Bake 25 minutes for 9" square pan, 20 minutes for 12 regular muffins or 15 minutes for 24 mini muffins.

Also good without the bacon.

I have a few cornbread recipes that don't use a mix - the first I copied from the Quaker Corn Meal Box probably 35-40 years ago:

1 cup corn meal (now I use stone ground from Nora Mill near Helen, GA; originally I used Quaker)

1 cup all-purpose flour

4 tsp baking powder

1/2 tsp salt

1/4 cup vegetable oil

1 cup milk

Preheat oven to 400F. Combine dry ingredients (corn meal thru salt). Combine wet ingredients (oil thru egg). Add wet ingredients to dry until just blended. Pour batter into greased pan or muffin tin. Bake 20-25 minutes for 8" or 9" square pan or 15-20 minutes for 12 regular muffins.

For Sour Cream & Chive Variation: Add 1/2 cup sour cream and 1/4 cup freeze dried chives to basic batter.

Plain Cornbread Recipe

2 cups Self-Rising Corn Meal Mix – we use Martha White Self-Rising Buttermilk Corn Meal Mix which has baking soda added

3TBS oil or shortening, some will use bacon drippings, vegetable oil is used a lot, I use avocado oil for health implications and it’s higher smoke point 500 degrees especially for the skillet prep step

1 ½ cups milk or buttermilk. We typically use 1/2 n ½

1 egg beaten

Heat oven to 425 degrees

Place a 10” cast iron skillet in the oven and heat at least 3-5 minutes. Alternatives are metal oven safe pans. Do not use glass. This is what gives the cornbread a crisp crust.

In a bowl, mix dry ingredients

Add milk and egg and hand mix until thoroughly blended. Add oil and blend again well

Pull skillet from oven, pour in more oil and rotate skillet distributing oil over all of the bottom and most of the sides. A little extra is OK but not a lot, you are not frying here.

Pour batter into skillet. Tap skillet on surface to distribute evenly within the skillet

Bake 20-25 minutes until a toothpick inserted into the middle comes out clean. Pull from oven and spread butter on top.

Let it rest for at least 20 minutes before cutting it. Do not leave in skillet past cooling. When COMPLETELY cool wrap in foil or plastic wrap.

Reheat in 350 oven or in microwave wrapped in damp towel. Can store on counter for 1-2 days or week in fridge. Can also Freeze. When I freeze I use microwave and damp towel reheating to restore moisture lost by freezing.

Mexican cornbread – Add cup frozen or canned corn(drained well). Also 4 oz green chilies or chopped jalapenos and 1cup cheddar cheese to batter. Baking will take longer 25-30 min, same toothpick test.[/quote]This is so awesome. Thank you so much for sharing.

Classic Rice Krispie Treats

Prep time: 5 mins
Cook time: 5 mins
Yields: 24 treats

Ingredients
3 tablespoons butter
1 package (10 oz., about 40) jet-puffed marshmallows or 5-1/2 cups mini marshmallows
6 cups Kellogg's Rice Krispies cereal

Instructions
Melt Butter: In a large saucepan, melt butter over low heat.
Add Marshmallows: Add marshmallows and stir until completely melted. Remove from heat.
Mix Cereal: Add Rice Krispies cereal and stir until well coated.
Press and Cool: Using a buttered spatula, evenly press the mixture into a \(13 \times 9 \times 2\)-inch pan coated with cooking spray.

Set:
Let cool for about 1 hour before cutting into 2-inch squares.

Simple Tips
Microwave Method: Microwave butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth, then add cereal.
Extra Gooey: Use 12 oz of marshmallows and an extra 1/2 tablespoon of butter.Best Results: Use fresh marshmallows and keep heat low to avoid hard treats.

Bourbon Balls
Bourbon balls offer up a powerful punch while packaged in a small bite.

Hands On Time: 30 mins
Total Time: 53 mins
Yield: 3 dozen
Ingredients
1 (11-oz.) package vanilla wafers, finely crushed
1 cup finely chopped pecans, toasted
3/4 cup powdered sugar
2 Tbsp. unsweetened cocoa
1/2 cup bourbon
2 1/2 Tbsp. light corn syrup
Powdered sugar

Directions
Combine dry ingredients:
Stir together first 4 ingredients in a large bowl until well blended.

Mix bourbon and corn syrup:
In a separate bowl, stir together bourbon and corn syrup until well blended.

Combine bourbon mixture and water mixture:
Stir bourbon mixture into the wafer mixture.

Roll bourbon balls:
Shape into 1-inch balls.

Roll in powdered sugar.

Chill bourbon balls:
Place finished bourbon balls in a lidded container, cover, and chill at least 30 minutes. Store chilled in a container up to 2 weeks.
